Hunan cuisine is one of the eight major cuisines in China, with its strong oil color,sour, spicy, fragrant and fresh. Changsha is the center of Hunan cuisine,where you can taste all kinds of typical Hunan cuisine. The Chopped pepper fish head is the most popular dish on the table today, and also one of the representative of Hunan cuisine. Here is the way to make the dishes: First, Wash the fish head, chop it to 2 parts, then put a small amount of oil and cooking wine, ginger on the fish head, the most important is to put chopped red pepper,white pepper. The most famous stinky tofu has a history of nearly a thousand years. The long history can be traced back to the Xuantong reign of the Qing dynasty, when the empress dowager Cixi gave it the name "Qing fang", making stinky Tofu famous all over the world. According to historical research, the empress dowager Cixi also had tasted the  stinky Tofu in Shaoxing and put it in the list of imperial cuisine. Stinky tofu in Changsha smells bad and tastes good. Some people keep it away because of the smelly flavor, while others regard it as their favorite. In 1958, when MAO zedong came to Changsha for inspection, he made a special trip to tasted stinky Tofu in the fire palace restaurant. 

Sugar oil BaBa

One of the most famous snacks in Changsha is sugar oil Baba,which is Fried in sugar oil and tastes sweet and not greasy.Walking on the streets of Changsha, you can always smell the refreshing sugar and oil Baba from the stalls. It is very simple to make the Sugar oil Baba, all you need is a stove, a pot, a cart, and a wooden stand. Although sugar oil Baba is cheap and mainly made of white flour and cane sugar, it has a delicate and special manufacturing process , Moreover, you should  eat while it is still hot and the taste is gone when it become cold. Therefore,you should not be afraid of being hot when eating sugar oil Baba,  However, people with diabetes should be careful. Recommended place to eat: Ligong miao sugar oil Baba.

Sister Dumplings

In the early 1920s, a pair of sisters surnamed Jiang sold beautiful and delicious Tuanzi(A kind of Dumpling) near the Huogong palace. The sweet and fragrant sugar filling was not greasy,it is in white color and small size. You can get the Sister's Tuanzi in Huogong palace if you wanna try .
